■ Ingredients:
~2 tablespoons green cardamom pods
~1 tablespoon black peppercorns
~1 tablespoon cloves
~1–2 cinnamon sticks (about 3–4 inches)
~2 teaspoons fennel seeds (optional, but lovely)
~1–2 star anise (optional, for a slightly licorice flavor)
~1 tablespoon dried ginger powder (or 2 tablespoons if you like it spicier)
~½ teaspoon nutmeg (freshly grated if possible)
■ Instructions:
1. Toast: In a dry pan, lightly toast cardamom, peppercorns, cloves, cinnamon, fennel seeds, and star anise over medium heat. Stir constantly until fragrant (about 2–3 minutes).
2. Cool: Let the spices cool completely.
3. Grind: Transfer toasted spices to a spice grinder or mortar and pestle and grind to a fine or slightly coarse powder — depending on how you like it.
4. Mix: Stir in the ground ginger and nutmeg.
5. Store: Keep it in an airtight jar. It stays fresh for about 3–4 months.
